Bain marees keep food at a controlled temperature, the water under the trays is kept at a steady level due to the laws of nature. Boiling water won't pass 100 degrees celcius and steaming water is much less, so the food won't dry out or burn. There are large combinations of trays which allows your to mix the food you are warming in terms of their quantities required and the sauces or side serves required. Lids to the trays help maintain the heat and keeps away unwanted pests.
